we went to visit one in activity, the good old way to do it too!
basically, they get some sea water through a maze of canals becoming shaloower and shallower to increase the concentration of salt in the water, until they have litlle square ponds of 4x4m of 1cm deep, then they rake it to make a pile then collect it, stock , dry and sell.
they do as well collect the salt that is at the surface of the water called "fleur de sel" (as oppose to the salt at the bottom called "gros sel") that one is worth 10 times more than the rock salt. however there 's far less and the climate conditions are a bit more demanding (sun, wind and no dew...)
